It’s with great enthusiasm that we announce the release of the Nouvelle Cave Selection!
Our passion for wine, vines and winemaking is what prompted us to take part in this exercise.
The aim is not to revolutionise or pretend to do better, but quite simply to enjoy following all the stages in the making of a wine and to be able to play with a number of parameters in the winemaking process.
These are our wines, and we can’t wait for you to discover them!
A Gevrey Chambertin, A Savigny Les Beaune
We embarked on this project in 2022, during Jean-Michel Jacob’s last harvest at the Lucien Jacob estate. One part Savigny, one part Gevrey, all from a very fine harvest and some beautiful grapes!
As usual at the estate, everything was 100% destemmed. Fermentation got off to a smooth start, with only light pumping over every day.
Once the alcoholic fermentation was complete, the wine was put into barrels on fine lees in two beautiful rooms already fed by fine Pinots!
15 months of ageing later, at the start of the second winter, under the rigorous supervision of Jacques Bavard, the wines were bottled.
The result is two very fine, elegant juices. A Savigny les Beaune from the Ez Connardises parcel at the bottom of the village and a Gevrey Chambertin from the Justice parcel in the north-east of the appellation.
These two wines are already very approachable, with fine personalities and bright, fresh fruit for a sunny vintage with well-integrated ageing!
